A Fabulous Ferrero Rocher Giveaway! 08/12/14

Win a 500 Cupcakes Recipe Book 07/12/2014

So December and impending Christmas festivities is really all about indulging – and what could be more indulgent than an icing laden cupcake? I like some icing, not too much but not too little, and of course it must taste as good as it looks! My icing skills are certainly not professional in any shape or form but with a little guidance and hard to find patience I can achieve good things! I have finally purchased a pack of modelling tools in the sale so it might improve with time!

At Christmas time we always have my mum’s gorgeous light fruit cake and mum knows fully well that without it we would most likely disown her or perhaps sell the concert tickets I have bought for her, shh! However not everyone sadly loves fruit cake but there are lots more cakes, of all shapes sizes you can enjoy too! From show stopping tiered wonderlands to petite fairy buns there is something for everyone – and nothing is more controversial than the humble cupcake! For some of my friends they shy away in horror at the thought of one, the rest would probably devour it and not come up for air during its quick death!

To coincide with the launch of the 500 Cupcakes recipe book by Apple press, which has been written by Fergal Connolly and Judith Fertig, I have a copy of the book to giveaway to one lucky cupcake loving reader!

This chunky little book is full of inspiration and a range of exciting bakes and even more exciting toppings to play with and have some fun along the way too! There are even some savoury cupcakes - how about a Basil Pesto Cupcake? Not quite sure but sounds intriguing.......!

A Spicy Giveaway 06/12/2014 **NOW CLOSED**

Now some of you will know from last years bare your cupboards from Belleau Kitchen I am er, a bit of a spice hoarder, well nothing has changed during 2014 and when a new company approached me recently offering some intriguing sounding spice mix called Basaar I really could not say no!

Better with Brita Giveaway - 05/12/2014

We live in a particularly hard water area and after moving to our current flat I found that the tap water tasted rather nasty but after growing fed up of lugging back expensive bottles of mineral water, not to mention a little concerned over how many we were going through and throwing away, we eventually grew used to the taste of tap water providing its chilled down….

Then along came our gorgeous bright pink fuschia Brita Marella filter and now we have lovely tasting, clear and freshly filtered water, no lugging heavy bottles, no landfill with the empty bottles and its so easy to use! Though it has a different lid to one I had many years ago and the lid pops up rather than just sticking it under the tap and the water flow pushes it down, and I got soaked on the first filling oops! I have learned my lesson now!

The Marella jug is a sturdy design and yet slim enough to fit in the fridge door on most standard fridges – we have, erm, two fridges and it fits our main larder style one easily but it’s a bit of a squeeze in the under counter one. To filter the water quickly and efficiently the jug takes patented MAXTRA cartridges which have filtration technology that reduces limescale and impurities which can impair on taste in your drinking water.


I will be featuring Brita filtered water in some upcoming recipes but for now I have a Brita Marella filter, in a choice of your colour to giveaway! Though I can of course highly recommend fuschia ;-)

Godiva stocking Giveaway - 03/12/2014 **NOW CLOSED**

When I was little I have fond memories of waking up on Christmas morning to find a stocking (or a carrier bag in latter years!) filled with treats, hung just inside my bedroom on the old fashioned towel rail to explore! It usually had a net of chocolate coins, wrapped in their glitzy gold foil, a traditional Clementine and a few small toys to play with. I will have to ask my parents if there was anything else as I can't quite remember that far back!


Of course the main event of the stockings contents was of course the chocolate and now I am sadly a grown up I don’t tend to get given a stocking by Santa (I obviously must have been far too naughty!) but this year I have been given this gorgeous festively red knitted Christmas stocking from luxury chocolate makers Godiva! It has a beautiful gold Poinsettia design and you can reuse it next year too!

Inside the Godiva Christmas stocking its stuffed with a selection of limited edition Milk, Dark and White chocolates, all in festive designs and retails at £17. Needless to say as much as chocolate coins wrapped in foil still warm my heart, the luxury Godiva chocolates are a hell of a lot more tastier!

A Healthy Start to December with a Juicy giveaway! 01/12/2014 **NOW CLOSED**

I am so excited this is my first blog post, on the 1st of December and it’s the start of a mega giveaway on Anne’s Kitchen! To kick it all off the lovely people from Bella Housewares have given me a fantastic juicer to help get you healthy after all the festivities have passed and you know its fruit o clock and not chocolate o clock!

For me juicing is a complete new experience – I will be honest in that I am not the biggest fruit juice consumer and always water mine down – when ever people offer me soft drinks I normally reply ‘just to colour the water only’! However juicing has intrigued me, especially as my health the past few years has been a little up and down and whether a bit more fresh fruit might help things... plus having freshly juiced drinks surely has to be healthy and will boost my 5 a day intake! Despite my no juice declaration I do admittedly quite like some of the freshly squeezed on the market by certain brands but they are a treat item as they can be quite expensive to buy! Hopefully by making at home it will hopefully turn an indulgence into a more regular treat!

When my box containing my Bella Whole Fruit Juicer arrived it was a little daunting but once unpacked I thought yeah we can do this…once of course I figure out which bit goes where of course! I was a little saddened that you can’t juice bananas, they are one of my favourites but there is still lots of other fruit you can use. I just need to decide what to make, and I must admit the cocktail recipes in the pamphlet sound rather tempting....

Giveaway - Organic Coconut and Date Snack Bar's

Following on from my Coconut brownies post earlier in the week, as promised I am now back with a little Cocafina giveaway for you! I have not done much baking this week as its just far too hot and making dinner has been enough to exhaust me but I have been enjoying tasting some other products that Cocafina sent to me instead!


For the majority of the time I love anything coconut based – cake, macaroons, Thai curries, biscuits etc but for some odd reason I am really not fond of it in yoghurt form, I wont thank for you for that at all. No. Very odd... I am not sure why but think it vaguely reminds me of coconut shampoo that my nan always had in her bathroom..

...Anyway I had great fun playing around with the items that Cocafina sent to me, which fortunately didn't involve yoghurt in any form but instead included some delicious bars, my favourite was their Macaroon bar which was simply heavenly! Lightly toasted coconut without being too sweet and it made a great on the go treat! Well actually it was more a late breakfast if anything as I was going shopping and hadn't felt hungry at home and it kept me going till lunchtime!

So over to my giveaway - I have a whole case of Cocafina's Organic Coconut & Date Snack Bar's for one lucky winner! Chilli Chicken Bean Bowls

Have you heard of Uniform Dating? For those who don't know they are a dating website and whilst I didn't meet my B via there, in these modern times I think dating sites are a great idea to find people with shared interests without having to hang around a bar trying to catch someones eye or some dingy pub batting off the undesirables! I have had my fair share of that and I am so glad to have settled down now! Anyway over the past few months Uniform Dating have been working with Chef Michael Caines to create a new Uniform Foodies dating app, featuring his recipes - and as of today it has my Chilli Chicken Bean Bowls too! It goes live today so do check it out! Its currently only 69p to download in the app store!


Whilst I am not a Nurse, outside of blogging I actually work in a hospital and up until very recently worked as a Healthcare Assistant alongside the Nurses on a busy medical ward, and for my Uniform Foodies recipe challenge I of course chose to create a Nurses favourite meal – which following a national survey by Uniform Dating was salad! (I wont mention how quickly a box of chocolates or biscuits will disappear in when left at the desk!) 

For my salad I wanted to keep it simple but special as when you are working shifts around the clock and often lack time to create something tasty the instant noodle packs become far too appealing – so when planning my salad for the challenge I decided to go with some lean protein – chicken breast and lots of veggies for replacing all those vitamins lost during a busy shift along with some carbs in the form of a tortilla wrap that forms the base of the meal too and kidney beans for extra protein! Its also quick to assemble with fairly normal ingredients to find and can be prepared in advance around your life!

By making my salad a little spicy plus the idea to eat with your hands if desired, you can potentially eat this with your loved one (who you might perhaps find on Uniform dating!) and turn on a bit of caveman instinct getting a little dirty by breaking off chunks of the crispy tortilla to scoop the filling out or simply enjoy by yourself and save the leftovers for lunch the next day! Either way its quick, tasty and super easy to make!


Serves 2
Easy

Ingredients

Bowls:
2 tortilla wraps
Spray oil

Salad:
375g Chicken breast diced into ½ inch chunks
½ red onion finely sliced
120g cooked kidney beans
1 spring onion, finely sliced
2 garlic cloves, minced
2 tsp Lime juice
1 tsp cumin seed
2 tsp Smoked paprika
½ tsp chilli powder
1 tsp ground coriander
½ Yellow pepper sliced
20g coriander leaves shredded – save the stalkier parts to put with the chicken
6 outer leaves Romaine lettuce
1/6th Cucumber, halved cored and finely sliced
1 salad Tomato
Salt and pepper
4 heaped tbsp sour cream
Olive oil

Start in advance by making the ‘taco bowls’. There are a few different methods I found on the internet but I used one of our large cereal bowls. Spray with oil soften the wrap in the microwave for about 20 seconds to make pliable and shape around the upturned bowl. Place on a baking tray (it will be easier to get our the oven!) and cook in a hot oven – about 200o for about 10 minutes, until lightly browned and crispy. Allow to cool fully and if not using straight away store in a food bag or air tight container.

Marinade the chicken in a bowl with the lime juice, smoked paprika, chilli powder, cumin, ground coriander, season with salt and pepper and add a teaspoon of olive oil and mix well.

Heat 1 tbsp of oil in a frying pan, sauté the onion until lightly browned, add the chicken and brown on both sides before adding the pepper, fry for a further 3-4 minutes then stir through the beans and tomato slices, cook for a further 3-4 minutes or until the tomato is starting to break up, stir through the spring onion and coriander stalks then turn off the heat and put to one side.


By hand, halve the romaine leaves through the middle. Use the top parts to garnish your taco bowl and finely chop the remainder. Place in a bowl with the cucumber slices and most of the fresh coriander.


Add to the bowl the warm chicken mixture, toss together and fill the taco bowls. Top each bowl with 2 tablespoons of the sour cream and a little remaining coriander to garnish.


My spicy Chilli Chicken Bean Bowls were great fun to make and to eat! I constantly try new things and it ticked the boxes with a tongue tingling chilli kick! Create a Winning Menu..to Win a fabulous Caribbean Cruise with Thomson!

Thomson Cruises currently are running a fun promotion to win a Caribbean Cruise with them, all you have to do is design a three course menu to feature on board using their interactive website! I had good fun working through the many options and below is a run through of my (winning!) menu! You can enter using this link.


Making a Start with your delicious Starter:

There are a delicious array of starter options to choose from, such as Smoked salmon, Parma ham or Crab. Once you have selected your main ingredient, then choose from the vegetable options such as Asparagus, Wild mushrooms or olives and then finish the dish with a choice of breads including Baguette, rye and foccacia


I chose – Smoked Salmon, courgette and foccacia bread. Once that’s decided you have to describe your dish in detail, so that if your idea is successful the chef can prepare it!

My recipe idea was: Creamy Smoked Salmon and Courgette Rotoli

Recipe - A regular Courgette, sliced thinly length ways and gently griddled until lightly golden, then a spread with a layer of lemon and dill infused ricotta, followed by a layer of smoked salmon, rolled up tightly and served filling side up and drizzled with an lemon infused olive oil and served with small chunks of warm foccacia on the side. Three rotoli to be served per portion.



Once you have finally decided on the starter then its on to the Main Course!

Like before you have plates to click on but there are now six parts to it – Main ingredient, vegetables 1,2 and 3, bread, and rice and pasta

Main ingredients included Beef, Venison, Vegetarian (some main vegetables I.e. aubergine), Scallops and even Lobster!


.....Of course I had to choose Lobster – a very rare treat item but a cruise is no ordinary holiday and when else can you treat yourself than when on holiday I think? 


By choosing Lobster, you then get to choose a cooking style – I decided as we had started along the Italian route, I would keep to the theme and chose sweet potato, spinach, tomato, risotto and ciabatta to accompany... Some of my favourite ingredients! I have only cooked lobster once and fortunate enough to eat a small handful of times out but I really enjoyed it, it would be really lovely to have it again too!


 Parmesan Crusted Lobster with Baby Spinach and Sweet potato risotto

Recipe - Lobster – simply cooked in salted boiling water for about 15 minutes – depending on its size. Then halved through the body length ways. Meanwhile sweet potato chunks and Baby plum tomatoes roasted for 20 minutes, and then gently stirred into a simple risotto made with white vermouth, garlic and onion along with a handful of baby spinach leaves. A butter made with parmesan and basil leaves placed over the lobster and gently grilled until lightly golden and served atop the risotto. Slivers of toasted ciabatta served on the side.


Last but not least – Dessert!

For the final countdown you are then provided with several options including Brownies, torte, gateau and Ice-cream. Now I pride myself on my brownies but they don’t seem luxurious enough so I opted for a cheesecake – my second love! One of my favourite recipes is my Honey and Almond Cheesecake (which is elsewhere on the blog) so of course had to go with that option! Its surprisingly light as I sneak in low fat ricotta with the luxurious mascarpone so gentle on not only the hips but tummy too! Essential to look good in your bikini on board!


And now its just a case of nervously pressing the submit option!


Once submitted – after approval your menu will feature on their site for the world to see – its worth checking out first for some inspiration! This is of course providing you see it prior to making your menu..

The competition closes at 23:59 on the 12th of January 2014, 3 finalists will then be selected and will be given the opportunity to try their dishes onboard a cruise to the Canary Islands in March 2014. The winner will be chosen by an expert panel and will be sent on the Pride of Panama cruise around the Caribbean in January 2015.

Giveaway: Dairy Diary 2014

Last week, an email popped into the inbox about reviewing next years Dairy Diary. My initial well practiced reaction was noooo must say nooo to more books..there is just no more room but then logical brain side kicked in, I would be absolutely lost without my diary, so just maybe I can find room... also the sentimental side - I remember my nan having 'Dairy Diary's' when I was younger, stuffed full of notes, recipes etc. Whilst sadly she is no longer with us, seeing the diary makes me smile in reminiscence of nan.

So the logical side kicked in, and a few days later my copy arrived, with all its floral splendor covering. The diary is nicely sized, not too big..not too small and has a wipeable cover. When your'e as clumsy as me, these things matter!


Inside, the pages are ring bound which makes the pages easy to manouvre and are seemingly sturdy enough to withstand regular usage. And there's a ribbon. I love page ribbons, so helpful!! Another highlight is the first 'pocket' which has practical stickers in, covering a range from 'Birthday' to 'Holiday' (wishful thinking there!). Yes I may be 31 but surely that's not too old to enjoy stickers? If so I better go hide my Hello Kitty ones...

Then comes the content page, listing its recipes, useful conversion charts, national rail map, numbers and most importantly what caught my eye was 'Super Cute Mice'. Well of course I had to flick straight to page 38, only to discover they are crocheted ones. My heart sunk a little, I really can not crochet. I need to steal someones granny for a week and finally master it! My mum can crochet endless blankets, but is very impatient teaching me! They are indeed cute though...one day!! Maybe I could make an edible version instead...

Diary Diary has been running since my birth year of 1982, a good vintage haha, am sure its fate which brought us together! It originally used to be sold by our milkman but sadly there's not so many of them driving their little floats around nowadays, but you can easily buy a copy online or by phone.

Free Beer! *COMPETITION HAS FINISHED*

Yep, your eyes are not deceiving you. There is free beer, well beer to be won anyway! Whilst here at Anne's Kitchen its mostly about the food, I am also rather fond of the occasional beverage to go with it!


Following my delicious posting recently involving the gorgeous crispy tofu I made using some of Sharp's Honey & Spice ale, I am super pleased to have a set of their connoisseur beers to give away to one lucky reader!

Sharp's Brewery have launched the beers with a little challenge of how to match with your food. Whilst I 'tested' them rigorously on their own, I also am rather partial to using wine/ beer etc in cooking and so my crispy tofu was born! The beers flavour gave the batter a wonderful taste and will be something definitely getting cooked again soon!

This year at Anne's Kitchen I have been bringing regular inspiration and recipes to you using Knorr products, after all a great stock can turn your dish from good to great! Whilst I do love to cook from scratch, sometimes its not always practical to make my own stock and I admittedly regularly use ready made stock , and I am very much converted to the Knorr stock pots!

This week I was lucky to receive another box full of culinary goodies to play with from Knorr and Forman and Field, and will bring you my recipe shortly - here's a sneaky preview for now:
