A good hearty winter soup made with whatever;s in the fridge - stock always makes it taste as if it's NOT been made out of odds and ends

Everytime we roast a chicken, I pick the carcass for leftover meat after dinner, then the carcass goes into the slow cooker to make stock overnight. Next night, risotto, usually with both the stock and the meat, diced.

I add stock to a stew I make in the winter months. It contains diced beef, potatoes, carrots and mushrooms, very yummy! And easy as well, basically cooks itself once everything is in the pot :)
